Honey Mustard Salmon Bites
These honey-mustard salmon bites are a perfect balance of sweet, tangy and savory flavors. As an appetizer, these bite-size pieces of tender salmon, coated in a sweet honey-mustard glaze, are easy to serve on toothpicks or skewers. Or make them a main dish, served over brown rice to soak up the extra sauce.
Ingredients

1 pound center-cut salmon fillet, skinned and cut into 1-inch pieces (about 2 cups)

2 tablespoons unsalted butter, melted

¼ teaspoon salt

¼ teaspoon ground pepper

1½ tablespoons Dijon mustard

1 tablespoon honey

Chopped fresh flat-leaf parsley for garnish (optional)
Description
- Preheat oven to broil with rack 4 inches from heat source. Line a large rimmed baking sheet with foil. Toss salmon pieces with 2 tablespoons melted butter and ¼ teaspoon each salt and pepper in a medium bowl. Arrange the salmon pieces in a single layer on the prepared baking sheet. Broil until the salmon is slightly browned around the edges, 5 to 6 minutes.
- Meanwhile, whisk 1½ tablespoons mustard and 1 tablespoon honey together in a small bowl until combined. Remove the salmon bites from the oven; spoon about half (about 1 tablespoon) of the honey mustard evenly over the salmon bites.
- Broil until the salmon is cooked through and the glaze is lightly browned, about 2 minutes. Remove from oven; gently spoon the remaining honey-mustard mixture over the salmon bites. Transfer to a serving platter and garnish with parsley, if desired.
