Quinoa Avocado Salad

Ingredients

  • 3 tablespoons lime juice

  • 2 tablespoons avocado oil

  • ¾ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon ground pepper

  • 3 cups cooked quinoa, cooled

  • 2 medium avocados, chopped

  • 1 cup grape tomatoes, halved

  • 1 cup diced cucumber

  • ½ cup chopped fresh cilantro

  • 1 scallion, sliced

Description

  1. Whisk lime juice, oil, garlic powder, salt and pepper in a medium bowl. Add quinoa, avocados, tomatoes, cucumber, cilantro and scallion; stir gently until combined.
